Baking with Opies fruits with alcohol

Opies Fruits with Alcohol are typically bought at Christmas and used either as a small gift for a food lover or as a luxurious sweet treat to spoon over ice cream or meringue. But, now thanks to aTesco, Opies Black Cherries with Kirsch and Peaches with Courvoisier can now be enjoyed all-year round.

 

Opies take the darkest, most intensely flavoured cherries and hand-pack them with a good measure of indulgence in the form of Kirsch liqueur. Black Cherries with Kirsch make the perfect retro black forest gateau, and are great with ice cream or on top of a cheesecake. Opies Peaches with Courvoisier, are made with soft peach halves and coated in the most well-known French Cognac – Courvoisier. Most often enjoyed with ice cream or sorbets, the peaches are a great standby to make a quick Peach Melba.

This post is a competition which I am taking part in on behalf of Opies. The competition is pretty simple – cook or bake using the new Opies fruits in alcohol. I have received both jars of peaches and black cherries, but for this recipe I’m just using the black cherries. I will be doing something with the peaches at some point too.

 

Black Forest Brownies

Well I chose this particular recipe as it’s something that we as a family can all enjoy. Yes I know I’m using fruits in alcohol but seriously it’s extremely unlikely that myself or my children will get drunk or ill from the amount of kirsch I actually used.

Ingredients

  • 200g unsalted butter
  • 200g dark chocolate
  • 275g caster sugar
  • 30g cocoa powder
  • 100g plain flour
  • 1 jar Opies black cherries in kirsch
  • 3 eggs
  • Dark chocolate chips

Method

  • Preheat the oven to 180C (adjust for fan ovens)
  • like a square baking tray with greaseproof paper (you can use butter and flour if you don’t have any)
  • melt the butter and dark chocolate together. Use either a pan or microwave but be careful not to burn it
  • whisk together the eggs and sugar until thicker like mousse
  • pour the chocolate mix into the egg mixture, fold together. Take your time with this.
  • sift in the flour and cocoa powder and fold together again
  • drain the black cherries but keep the kirsch liquid
  • Fold in the cherries and add 4-6 tablespoons of kirsch depending on how strong you want them

Then bake for approximately 25 minutes

The brownies are done when the cake starts to pull away from the sides of the oven tray and a toothpick will come out with some mixture on but not liquidy.

Then cool. This will take up to an hour so be patient. Wash the dishes and get a warm brew whilst waiting.

Just perfect!

If you’ve timed the brownies correctly then they should be firm on the outside with a lovely gooey texture inside, but not too gooey that they fall apart or liquid runs out.

Then decorate how you wish. We used the left over Opies cherries along with cream and strawberry slices.

As with any dessert you can always make it that extra bit special, by adding a dressing, or sweet sauce for dipping. Dessert Parlour have many sweet sauces and treats to choose from.
