BritMums #HealthyRedMeat challenge 

I like to try and cook meals from scratch for my children and use healthy ingredients. This is extremely difficult when you have the worlds most fussiest teenage boy. However he is also a good cook and often chooses to cook his own thing, albeit not always the healthiest. 

One of the healthiest, tastiest and most versatile ingredients is lean red meat. Red meat includes pork, beef, lamb and less popular meats such as Veal, Mutton, goat and horse.  
 Experts  recommend including it in children’s diet from weaning onwards. It provides a range of important nutrients that are often low in toddlers and children – including iron, zinc, B vitamins, selenium and potassium.
 The  #HealthyRedMeat challenge via BritMums UK is sponsored by the Meat Advisory Panel. I was challenged to create a  recipe with beef, pork or lamb.

And I chose lamb, my overall favourite one. Lamb can be expensive sometimes depending on the cut. I opt for small joints like this from Tesco as there are only 3 of us eating it. 
For my dish I chose a lovely traditional roast dinner. However I prepare the lamb with a little honey and herbs, thyme, basil, salt, pepper prior to placing in the oven and slow cook on low heat for about 3 hours. 
 
With a bit of luck the meat will be soft, tender and will literally fall off the bone with ease. The honey and herbs give it extra flavour. 
Then add potato and some vegetables, and gravy. 
 

Me and my girls all enjoyed our delicious lamb dinner.
